Vegan Victoria Sponge Cake Recipe

 

A Victoria Sponge Cake is a classic when it comes to summer garden parties or afternoon tea but why not try it plant based? - Happy baking!

 

Ingredients

 

For the sponge:

 

1 tbsp apple cider vinegar

1 tbsp vegan vanilla extract

300ml oat milk

150g dairy-free spread + extra to line your tins

300g self-raising flour

200g brown sugar

1 tsp bicarbonate of soda

 

For the filling:

 

5 tbsp jam- strawberry is best!

5 thinly sliced fresh strawberries

100g dairy-free spread

200g icing sugar

1 tbsp vanilla extract

 

For decoration:

 

8 fresh strawberries (sliced in half)

8 raspberries (slides in half)

Icing sugar

 

STEP 1

First preheat your oven to 180C/ 160C fan/ gas 4. Grease x2 round sandwich tins with some of your dairy-free spread. Then line with baking parchment.

 

STEP 2

Add your oat milk to a jug with the vinegar, leave this for a few minutes until it appears lumpy. Next, take a large bowl to add the vanilla extract and other sponge ingredients. Last, pour in the milk mixture. If you have one, use an electric whisk or if not, a wooden spoon will do. Use this to combine the mixture until smooth.

 

STEP 3

Split the cake batter between your two tins, then bake in the centre of the oven for 30-35. Once baked, leave them in their tins until cool to the touch. Next, carefully turn your sponges out onto wire racks to cool completely.

 

STEP 4

As the sponges are cooling, you can start on the filling! To make the vegan buttercream, beat together your dairy-free spread, icing sugar and vanilla extract. It’s best to stir the ingredients together to avoid overworking it.

 

STEP 5

Now use one of your cooled sponges and spread on the jam, then top with the buttercream and layer with freshly sliced strawberries. Last, carefully sandwich together the two sponges.

 

STEP 6

 

For the icing glaze, add 4 tbsp of icing sugar to a small bowl and combine with 1-2 tbsp of warm water. If too watery add more icing sugar, if too thick or powdery, add a dash more water! Finally, glaze your cake with the icing. Top with fresh strawberries, raspberries and a dusting of icing sugar. Present on a trey with your Eva Darling Designs tea towel of choice!
